This region is amazing!! There is the greenest fields you have ever seen, growing fresh food everywhere, that you can buy on the side of the road if you want to.
Lake Tinaroo Holiday Park was our basecamp for the few days, with the agenda of fishing & bike riding. However of our daily fishing attempts, I was the only one to catch a fish...and it was a large catfish that went back in the water. We found lots to explore around the dam, with an amazing spillway to view, lots of day camp spaces to fish or birdwatch from, bushwalks in the National Park & lots of opportunity to relax (which I would enjoy doing if I didn't have 4 hungry fishing boys to feed). We stumbled across the Tolga markets which gave us a chance to stock up on fresh produce from the area - mainly Bananas, Blueberries & Cirus which are all in season at the moment. While we were in town we took the chance to visit The Humpy Speciality Grocery Store for some Gluten Free pantry items, & then a stop into the Station Cafe in Atherton for coffee in their old railway carts.
Our second afternoon fishing, I got organised and took the ingredients with us to the Lake, to show you my favourite 3 step Risotto. Enjoy the video of the Risotto with some bonus footage of Lake Tinaroo -
